Welcome to the Foodborne Disease website. The sources of pathogens responsible for causing foodborne illnesses are pervasive. Food and its derivatives will invariably harbor a small concentration of pathogenic agents. When existing in minor proportions, these detrimental microorganisms do not give rise to any concerns. However, upon surpassing a particular threshold of contamination, they hold the capability to initiate sickness and potentially lead to fatal outcomes..

What are the symptoms of salmonellosis?

The most common types of food poisoning is salmonellosis, or Salmonella infection. Salmonella bacteria are part of the natural intestinal flora of many animals.

They are easily transmitted through the food supply, the hands of food preparers and the surfaces of objects such as knives and tabletops.

Possible signs and symptoms of salmonellosis include:
*Diarrhea
*Abdominal pain
*Feeling feverish
*Nausea
*Muscle pain
*Vomiting
*Chills
*Headache
*Blood in the stool

Symptoms usually develop within eight to thirty-six hours of eating contaminated foods. Diarrhea is often the first sign.

Salmonella can be invasive and this can lead to bacteraemia and Gram-negative sepsis. With certain serovars, principally S. Dublin, S. choleraesuis and some strains of S. virchow, the incidence of extra-intestinal infections is higher.

Salmonella can also weaken the immune system and cause kidney and cardiovascular damage as well as arthritis.
